Our Cheese
Tone makes cheese three days a week from milk that walked in from the paddock that morning. No shortcuts. No production line. Just good milk and experienced hands.

Bassine Queen Brie
Soft, buttery, and a little bit mushroomy. The rind is delicate and bloomy. Cut it cold or let it warm — it only gets better.
Aged: 2 weeks
Milk: Holstein Friesian
A silky paste that softens from the rind inward. Notes of cultured butter and white mushroom, with a gentle tang that builds on the palate.

Jam Jerrup
Golden, nutty, and smooth with a long clean finish. Try it with a crisp pear and see what happens.
Aged: 3–4 months
Milk: Holstein Friesian
A firm, supple body with a golden straw colour. Warm hazelnut and caramel notes with a clean, lingering finish. Pairs beautifully with a crisp pear.

Kilcunda
Named for the coast, kicked with chilli. Slice it, share it, ride the heat.
Aged: 6–8 weeks
Milk: Holstein Friesian
A semi-hard wheel with chilli flecks running through it. The heat builds slowly behind a clean, milky body. Slice it for a board, melt it into toasties, or shave it over eggs.

Farmhouse Haloumi
The squeak is right and the crust goes golden in the pan. Salty, milky, and works with just about everything.
Aged: Fresh
Milk: Holstein Friesian
Firm and squeaky with a satisfying salt hit. Pan-fry for a golden crust that gives way to a soft, milky centre. Beautiful in a summer salad.

Peppato
Cracked pepper, aged just right. Our Peppato — bold, slow, made to share.
Aged: 6+ months
Milk: Holstein Friesian
A long, slow age builds a rich, creamy body shot through with cracked pepper. Bold and peppery on the finish without overwhelming. Slice it thick onto a board with hard salami and crusty bread.

Ricotta Fresca
Made fresh each morning from that day’s milk. Light as a cloud, sweet and clean. Spoon it onto toast with honey.

Impossibly light and pillowy. Sweet, milky, and clean — the purest expression of our morning milk. Spoon it onto toast with honey and seasonal fruit.

Picnic
Fetta, Quark, Olives, Yoghurt. The pantry quartet. Picnic-ready, every weekend.
Aged: Fresh
Milk: Holstein Friesian
A four-piece pantry selection — salty fetta, fresh quark, marinated olives, and house yoghurt. Spread one across a board, pack the lot into a basket, and head for the coast.

Wonthaggi
Rich and creamy with the bite of a good cheddar. Slice it, melt it, or just eat it standing at the bench.
Aged: 4–6 months
Milk: Holstein Friesian
Named for the coast town down the highway. A semi-hard wheel with a creamy, full body and a clean cheddar-like bite at the back. Melts beautifully on toast and pairs with quince paste, a dark ale, and a long afternoon.
